The Most Wisconsin Recipe Ever

The cold weather makes me want to eat something warm and comforting. And since I live in Wisconsin, what food fits this description better than Beer Cheese soup? I would say nothing! But because I have no idea how to do things in moderation, I came up with an amazing new recipe – Bratwurst, Beer, & Cheese soup!

Tonya Haze’s Bratwurst, Beer, & Cheese Soup

1 lb. uncased Bratwurst

1 medium Onion, finely diced

1 bottle or can of your favorite beer (I used O’so, but any domestic or craft beer will work)

2 Cups Chicken or Vegetable Broth

2 cups Half and Half (or Heavy Cream, if you prefer it a little more creamy)

2 Cups Sharp Cheddar Cheese

Salt and Pepper to taste

Directions:

Sauté Bratwurst and Onions until meat is browned and onions are opaque. Slowly pour in beer. Bring to a boil and simmer for 10 minutes. Add Chicken Broth and Half and Half. Simmer until broth is just at boiling, but DO NOT ALLOW TO BOIL. Add cheese (and salt and pepper if necessary).

Serve with a side of freshly baked bread (or, a vegetable if you want to pretend this dinner is healthy).
